Yes a plant without leaves would produce oxygen. Now most of the oxygen does come from the leaves but not all of it. So there wont be as much oxygen as there is in the summer, but there will be some, because trees soak up the sunlight and carbon dioxside and release oxygen. My main anwser is no but it is partly yes. This is a because the plant would produce a very small amount of oxegen but about four times less oxegen would be made if its leave would be removed. Although a dead tree would slowly put back carbon dioxide into the air and a dormat tree or "hybernating tree" would only produce a small amount of oxegen. Just enough for it the survive the fall and winter days.
